These super tasty mini pancakes are gluten-free and so nutritious! Made with red lentil flour and carrots, they are a real treat for breakfast or dinner. 

My childhood memory and my comfort food. Mini pancakes or Oladi (Оладьи) in Russian, it doesn’t matter how you call it, it’s a always a great idea and my kids love it. Usually, these mini pancakes made with Kefir (a milk drink, similar to the yogurt) but I like to use yogurt instead. These Russian inspired pancakes are thick and puffy and have crispy edges.

My mom used to make them a lot and it took me a while to learn how not to burn them… And what I love about it is that you can really combine anything you want, you can add shredded apple or banana or raisins. It can be served with sour cream, maple syrup, honey, and jam. There are endless options. But what I like the most is to eat it with sour cream, just to balance the sweetness of the Oladi.

 

It is really easy to make, just whisk all the ingredients in a bowl. The longest process is frying but I can assure you it is worth it!

How to make the Oladi gluten-free? You can use any gluten-free all-purpose flour but I tried to bring up a healthier solution. The red lentil flour is high with protein and fibers and tastes great in sweet and savory recipes. I decided to add the carrot for the additional health benefit and sweetness.
