Super quick and easy farmer’s cheese gluten-free donuts. They are like the real thing! Made only with alternative flours and no yeast at all.
Each year in Hanukkah I search for different donuts recipes. Frying gluten-free donuts is a real challenge but there’s no choice because it can’t be found in bakeries.
In Israel, donuts are circle-shaped, filled with strawberry jam and sprinkled with a lot of sugar powder. My doughtier, who is with Celiac, is always asking for the donuts we ate in our USA trip back in 2015… “The one with the hole in the middle and spread with sprinkles”, as my daughter says.
All the gluten-free flour mixtures I’ve tried for donuts were nice but something was missing. The fluffy and airy texture of regular donuts.
Farmer’s cheese is an important ingredient in my kitchen. The reason for this I was born in Russia and we used that a lot in many dishes. It can be used both in sweet and savory recipes such as my recipe to this low carb sweet casserole. I can’t see any reason why farmer’s cheese won’t be the main ingredient in donuts!
Even Russians make donuts from farmer’s cheese- “Ponchiki”. My mom has never made them though, she was trying to avoid frying. But since we came across the Celiac, I have a more “forgiving” approach to frying. these gluten-free “Ponchiki” are perfect.
Which flour to use? I’ve tried several combinations and the best are rice flour, potato stretch and tapioca flour. These flours make the dough stretchy and soft.
The icing– you can really play with it. I used condensed milk. I mixed it with food coloring gel to get the pink color. And of course, sprinkles. Sugar powder will also be fine as a decoration.

Notes
It is possible to replace the potato stretch with rice flour.
You can keep the donuts up to 1 day in the fridge and than heat it in a microwave.
Ingredients
- 125 g farmer's cheese
- 2 tbsp sour cream
- 1 egg
- 1/4 cup tapioca flour
- 1/4 cup potato stretch
- 1/2 cup rice flour
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 tsp baking soda
- pinch of salt
- For frying:
- 1/2 cup vegetable oil
- For glaze:
- 2 tbsp condensed milk
- Few drops of food coloring gel
Instructions
- Combine the flours and baking soda in a bowl and mix to combine.
- Mix the farmer’s cheese, sour cream, eggs, sugar, vanilla and salt in a mixer or mix it by hand.
- Add the dry mixture into the wet little by little.
- Pour the oil into a heavy bottomed pot. Heat until small bubbles appear.
- With slightly oiled hands take a small scoop of batter and make the desired form- a ball or a ring.
- Fry the donuts until they are golden on 2 sides.
- Take out the donuts and let them drain on a paper towel.
- Mix the condensed milk with the food coloring gel.
- Dip the top of the donut into the glaze at room temperature and decorate with sprinkles.
