True, the Amaranth flour cookies are not the most beautiful, but definitely one of the healthiest. I’ve seen Amaranth flour in health food shops but had no idea what to do with it.
Once, I’ve grabbed a package and checked the nutritious facts. I was amazed by it: it has fewer carbohydrates compared to other gluten-free grains and contains a higher level of protein. It has only 102 calories per 100 gr. and 19 gr. of carbs. For comparison, a gluten-free flour mix contains over 300 calories per 100 gr. and over 50 gr. of carbs.
I am in a continuous search for new recipes with alternative flours. I like the taste of it and obviously their nutritional benefits. I have read that Amaranth flour also reduces Cholesterol levels and that is very important as I suffer from high cholesterol. Aside from cookies, I am adding this flour to casseroles and quiche dough.
These cookies remind me of oat cookies, they are less crunchy though. But they are a great companion to my coffee break.
What can you replace the butter with? coconut oil and olive oil- both are excellent.
Do you have to use buckwheat flour in the recipe? No, I just like to put this flour almost in everything. The texture of the dough without it is a bit crumbly. You can also add cornstarch or other GF flour..
